First of all, lightly fry the peeled crushed garlic with oil for 1 minute. Then add the whole peeled tomatoes cut into 4 parts with a little chopped parsley. Lightly fry garlic, oil and tomato together, finally stir and leave to flavor for 2 minutes. Add the borlotti beans and 1 tablespoon of chopped fresh parsley. Cook over medium heat, leaving the beans to flavor for about 1 minute. In the meantime, mash the tomatoes then add 1 full glass of water. Leave the beans to stew in the pot. At this point, cover with a lid and lower the heat and let the beans stew in the pot for about 10 minutes.
Add a pinch of salt and 1 glass of water, as soon as it boils again add the pasta to the beans and cook it. Let the pasta cook on a very low heat, stir and gradually add 1 tablespoon of hot water. The golden rule is to add the water slowly. By stirring the beans, they will come apart and create a cream. Your dish is ready when the pasta is cooked and the seasoning is thick and creamy. Salt, stir.
Serve this dish hot, with a drizzle of oil, a pinch of pepper and a little fresh parsley. Now you just have to taste your delicious “pasta with beans”!
