To prepare the spaghetti with garlic, oil and chili pepper, start by cooking the pasta in salted boiling water to taste. Cook the spaghetti “al dente” and in the meantime you can prepare the dressing: peel the garlic cloves, divide them in half 2 and remove the core (the central part).
Cut the wedges into fairly thin slices. Take the fresh red chili pepper, and cut it into slices by removing the stalk. If you prefer a minor spiciness, you can open it for the sense of the length and remove the seeds before reducing it into slices. Now pour the oil into a large pan. Heat it on a low flame and add the garlic and the chili pepper. Lightly fry the seasoning over a very low flame. For a uniform browning without risk of burning it you can tilt the pan so as to collect oil and seasoning in a single point and allow a uniform browning. Once the pasta is cooked “al dente”, you can transfer it directly to pan and add a ladle of cooking water.
Stir for a few moments to mix the flavors then your dish is ready to taste! Spaghetti with garlic, oil and chili pepper must be served hot.
